Apple Crisp Crumb Cake

Perfect creamy fall dessert with a crunchy apple crisp top.

Ingredients

  • Cake Layer
  • 1¼ cup cake flour
  • ½ cup granulated sugar
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • 1 tsp. ground cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. salt
  • 3/4 stick room temperature butter
  • 1 egg + 1 egg yolk
  • 2 tsp. vanilla extract
  • ½ cup room temperature buttermilk
  • Crumb Topping
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup cake flour
  • ⅓ cup old-fashioned oats
  • 1 tsp. ground cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. salt
  • 1 stick melted butter
  • Apples
  • 2 medium peeled and thinly sliced apples
  • ½ tsp. cinnamon
  • pinch of nutmeg
  • 1 tbsp. cornstarch

Directions

In a medium size mixing bowl, whisk the sugars, cake flour, oats, cinnamon, nutmeg and salt. Pour in the melted butter and stir until a thick crumble forms. Let it sit while preparing the remainder of the cake. Preheat oven to 325.

Spray an 8-inch square baking dish with baking spray. In a mixer bowl mix the flour, sugar, baking soda, and salt on low. Start to add the butter one tablespoon at a time. Continue mixing for about 2 minutes until crumbs form. Add the egg and yolk, mix, then add the vanilla and buttermilk. Beat on medium-high speed until batter is light and fluffy.

Pour the batter into the prepared pan, spread an even layer. Toss the apples, cinnamon nutmeg and cornstarch together. Layer apples on top of the batter, then add the crumb mixture.

Place in the oven and bake for roughly 40 minutes. Use a fork to test the cake center, don’t remove until the cake center comes out clean. Allow at least 30 minutes to cool for before serving.
